My dad got me this glass, what makes it interesting is that it is a heineken brewed with a wild yeast. "Heineken have finally released H41. In a first for Europe, and indeed the whole world outside of Argentina, H41 is brewed from a wild yeast found only in remote parts of Patagonia." He got it from the guys in the heineken bar at Dubai Airport, think terminal A

This is what I been working on today. The only goal this time, well, not the only one but you know what I mean, is to get this beer as close to the original as possible with my knowledge and equipment. So far so good!
OG is on target - 1,064, color is ok but I think it will lighten up a bit. Curious to see what the champagne yeast will do to it.

As we continue to brew, we push the boundaries of experimentation while at the core we remain true to style. This beer is a true example of that philosophy. We brewed this beer as a tribute to the Belgian tradition of brewing with the seasons. This Dubbel-inspired beer was brewed with locally foraged fresh spruce tips for an extra citrus note. We hopped it lightly with palisade and finished the beer with house made dark candi sugar. Open fermented hot in one of our tanks we allowed it to mature warm for multiple weeks to allow our house expressive saison yeast to shine though. Notes of plum, brown sugar and fresh baked bread interweave themselves with citrus, pepper and funk. It's dark but remains complex on the palate.
Had a chance to tour the cornhusker state's newest brewery .. and damn it these guys just get it. @krosstrainbrewing is about to start pumping out some of Nebraska's finest! Their Fairy Nectar IPA is truly unbelievable.
