Does anyone else get their bake on when this beautiful Autumn weather hits town?!? Quinces are perfect to have on poaching in the background while roasts and stews are cooked. If you haven't seen them in store yet, do take a moment to have a smell of them, they are so fragrant this year (if only Instagram had a scratch and sniff function!) They can be daunting but are actually super easy to cook. Peel and quarter them, chuck them in a pot. Add your poaching liquid (approx 4 cups water with 1/2-1 cup sweetener) then add spices like sliced ginger, cinnamon o and nutmeg, along with an orange of lemon peel or two.
Bring to the boil then reduce to a simmer and cover the pot with a lid. Cook for 40-50 minutes of until tender 😋
